Thai Fish Curry

A delicious, fragrant and healthy dish which is really quick and easy to make.

PREP / COOK TIME 15 mins

SERVES 2-3 adults Ingredients


1 onion chopped

3 garlic cloves chopped or minced

Thumb sized piece of ginger chopped finely

1 red chilli chopped

2 lemongrass stalks

1 heaped tablespoon of curry powder

1 tsp ground cumin

1 tsp ground coriander

1 tsp ground turmeric

1 tsp muscovado sugar

Small bunch coriander finely chop stems (optional)

400g tin of coconut milk

450g fish fillets cut into inch pieces

220g raw prawns

Handful of your favourite veg

1/2 lime

Cooked basmati rice to serve


Heat the oil and in a wide frying pan or wok,

Soften the onion for 5 minutes then add the ginger, garlic, chilli and lemongrass and cook for 2 minutes.

Add the spices and sugar and keep stirring.

When the sugar starts to melt add the coriander stems, coconut milk and 2 tablespoons of water, then bring to a simmer.

Add the vegetables to the sauce and cook for 5 minutes then add the fish and cook for 5 minutes until the fish is cooked.

Add the prawns until they are pink.

Taste for seasoning and add lime juice.

Scatter over coriander leaves.
