Swiss chard scramble

Perfect for a quick tasty lunch (or breakfast!)

Serves 1 | Cooks 10 mins


1 tablespoon olive oil

½ red or white onion chopped

1 garlic clove, pressed

2 to 3 Swiss chard, chopped (separate stalks from leaves)

½ teaspoon each of dried basil, oregano and parsley

½ red chilli (deseeded) chopped

2 eggs, beaten

Grated Parmesan (to your taste)

Salt and pepper to season.


Heat oil in a medium frying pan. Add onion, garlic and chilli; saute for 5 minutes.

Add chard stalks and fry for 2 mins then add chard leaves and saute until wilted.

Add the herbs, salt and pepper and grated parmesan to the eggs and mix. Add to the pan and cook, stirring, until eggs are set. Serve on toast.
