Red dragon pie

A delicious veggie alternative to a shepherd's pie which has a little fire and spice.

Serves 4 | Time 1 hour


200G borlotti beans

2-3 tbsp olive oil

2 medium leeks, sliced

2-3 garlic cloves crushed

4 carrots peeled and diced

1 tsp ground cumin

1/2 red chilli, chopped

1 tsp dried thyme

400G chopped tin tomatoes

1/4 pint veg stock

Salt and Pepper

For the mash

600G potatoes

200G cheddar cheese

1/2 chopped chilli

1 tsp thyme


In a wide pan, heat the oil then add in the leeks and cook on a medium heat until they begin to soften, then stir in the garlic, cumin, chilli and thyme and cook for a few minutes for the spices to combine and the garlic to soften.

Stir in the chopped tomatoes, crushing them further. Leave to cook for a few minutes.

Stir in the carrots and cook until tender (but still with a bit of bite).

Turn down and simmer until thickened, turn off and transfer to a large oven proof dish.

Boil the potatoes and mash, stir in grated cheese, 1/2 chilli and thyme. Cover the pie filling.

Using the back of a fork or spin imprint the top of the pie to fluff up the potato.

Bake in a preheated oven at gas mark 5 / 200 C for 45 minutes or until golden and bubbling on the sides.
