One pot cherry tomato and mushroom pasta

Cut down on your washing up with this delicious one pot dish.

Serves:4 | Cooking and prep time: 30 mins


1 tbsp olive oil

1 onion, thinly sliced

2 cloves garlic, crushed

1 tsp chilli flakes

300g mushrooms, sliced

400g tin cherry tomatoes (or use fresh)

2 tbsp tomato puree

1 tsp dried oregano

600 ml boiling water

A handful of fresh basil

400g spaghetti

Salt and pepper

Parmesan to serve


In a large wide pot/casserole, cook the onion and garlic in the olive oil until soft, then add the chilli flakes.

Add the mushrooms and season with salt and pepper and cook until the mushrooms are soft.

Add the tomatoes, tomato puree, boiling water, oregano, then stir well.

Add the spaghetti and press under the sauce.

Cook on a medium heat for 15 - 20 minutes with a lid on until the pasta ready with some bite and the sauce has thickened (add more water if needed).

Add the fresh basil, stir and serve with parmesan cheese
