MotoBiters Mild Curry

With the dreary wet weather and the current lockdown, we thought we would add a bit of spice into your life with this tasty mild curry. So, get your spice larder topped up and create a delicious feast your whole family can enjoy. If you don't like sweet potato or cauliflower you can use any vegetables you wish to.

PREP / COOK TIME 45 mins

SERVES 3 adults (or 2 adults 2 children)



1 tsp mustard seeds

1 onion chopped

2 garlic cloves chopped or minced

3 cm root ginger, grated or chopped

1/2 head cauliflower cut into florets

1 medium sweet potato chopped

1 tsp ground coriander

1 tsp ground cumin

1 tsp ground turmeric

1 tsp curry powder

400g tin chickpeas drained

400g tin of coconut milk

400g tin of chopped tomatoes

To serve (optional):

Basmati rice

Natural yoghurt

lime or lemon juice

Chilli shredded

Spring onions and coriander.


Heat the oil and add the mustard seeds, when they pop add the onion. Cook for about 10 minutes until soft.

Add the garlic and ginger and cook for about 2 minutes.

Add the cauliflower and sweet potato along with the ground coriander, cumin, turmeric and curry powder and cook for a few more minutes.

Add chickpeas, coconut milk and tinned tomatoes, cook for about 25 minutes.

Add some lime or lemon juice to some natural yoghurt and mix.

Serve with basmati rice and top with yoghurt, chilli, spring onions and coriander (optional)
