Lockdown lunches - Roast Veg Soup

Soups are a really great option for lunch, full of nutrients and flavour and they are so easy to make - there are no rules here - you can throw in whatever you have. This soup is a Nick creation which I've managed to capture. Nick makes fantastic soups but we never record them so we can never remember what ingredients he adds. Soups are really great to freeze too to pull out for a quick ready made meal. When lockdown is over pop some in a flask and take it with you for a ride out to warm yourself up mid ride.

PREP / COOK TIME 1 HOUR

SERVES 8 (freeze portions)


Ingredients

(please feel to freestyle with whatever ingredients you have in your fridge)


1 Crown Prince Squash peeled, deseeded and chopped (or another squash variety)

1 large onion chopped

1 pepper chopped (any variety)

1 sweet potato peeled and chopped

800g tinned chopped tomatoes

1 teaspoon smoked paprika

1 teaspoon cayenne pepper

Salt and Pepper to taste

1 large teaspoon of chilli flakes (optional)

Water


Instructions


Chop all your vegetables and pop them in a roasting tin with some olive oil and cook for 30 minutes

Take the veg out of the oven and pop it in a large cooking pan, mash.

Add your spices.

Add a large tin of tomatoes and enough water to cover the veg.

Blitz your soup with a hand blender and then simmer for 20 minutes.

Serve.
