Emma's chocolate orange cake

A rich, buttery and full of orange flavour cake and so easy to make too.

Serves 6-8 | Cooking time: 55 mins


200G plain flour

155G sugar

1 ¼ teaspoon of baking powde

178G unsalted butter softened

3 large eggs

1 large orange - zested and segmented (without peel)

Another orange to get 3 slices to top the cake

150G bar milk chocolate chopped (or use buttons or choc chips)


Preheat oven to 190 C.

Add the softened butter and sugar to a mixer and cream it together on a medium high speed. Make sure the sugar is completely dissolved as there should be no granules.

Add the eggs one at a time while mixing on medium low speed. Add the next egg only when the previous egg has been completely incorporated. Keep mixing until the colour turns pale yellow and becomes fluffy.

Sift the flour and baking powder together. Add them into the batter and fold it in until it’s combined.

Zest a large orange and chop up the orange segments into pieces. Gently fold the zest and orange pieces into the batter.

Line a loaf pan with parchment paper and pour in the batter, using a spatula create a well in the center. This will help the pound cake rise fully. Top the cake with 3 to 4 thin slices of orange, about ⅛ inch thick.

Bake at 190C for the first 10 minutes then lower the heat to 170C and bake for 45 minutes or until golden brown and a knife inserted comes out clean.
