Emma's herby smoked salmon & tomato quiche with a potato crust

I saw this idea for a lower calorie quiche using thinly sliced potatoes instead of pastry so thought I’d give it a try and I have to say it was delicious, lighter and really enjoyable. You can put whatever filling you want in the quiche but here is what I did.

Serves 6 | Time 1 hour


INGREDIENTS


For the base:

2 large potatoes slices thinly

Low fat spray oil

Salt and pepper

Pinch of garlic granules

30g grated cheddar cheese


For the filling :

5 eggs

200ml milk

Salt and pepper

Tablespoon fresh dill

Tablespoon Fresh parsley

Tablespoon Fresh chives

Punnet cherry tomatoes

Small pack of smoked salmon

20g grated parmesan cheese

Salt and pepper

INSTRUCTIONS


Slice the potatoes thinly and pop in a bowl - spray with low fat oil, season with salt and pepper and add a generous pinch of garlic granules.

Spray a large quiche dish with oil and layer the potatoes on the bottom and up sides (like you would your pastry) and add your cheddar cheese too.

Put in the oven at 180c for 20 mins.

Now make your filling - add your milk and eggs in a jug and mix. Season with salt and pepper and add all your chopped herbs.

Chop your tomatoes, grate your parmesan cheese and rip up your smoked salmon.

After 20 mins take the potatoes out of the oven and add the parmesan to the bottom, then add your tomatoes and smoked salmon and pour over the milk/egg mixture.

Cook in the oven at 180C for 30 minutes.

Serve with salad.
