Black beans for burrito bowls


These delicious black beans are perfect for a burrito bowl.

INGREDIENTS


Chipotle Paste

1 tablespoon cider vinegar

1 tablespoon tomato purée

half teaspoon cumin

half teaspoon smoked paprika

quarter teaspoon of oregano

a pinch garlic powder

Salt and pepper


Tin black eyed beans

150 ml chicken or veg stock


Other optional items for burrito bowl

Rice

Cherry tomatoes with spring onions

Peppers

Onions

Smoked Paprika

Coriander

Lime

Natural yogurt


INSTRUCTIONS


To make the beans make a chipotle paste with 1 tablespoon cider vinegar, 1 tablespoon tomato purée, half teaspoon cumin, half teaspoon smoked paprika, quarter teaspoon of oregano, a pinch garlic powder, salt and pepper and mix to a paste.

Put some olive oil in pan and add the beans and paste and mix.

Add 150ml of chicken or veg stock and stir.

Crush half the beans with the back of a spoon.

Cook, stirring frequently for about 10 mins.


To make a burrito bowl while beans are cooking cook some chicken (20 mins in oven) or halloumi (fry for 5 mins)

Cook some rice (12 mins)

Cut up some peppers and onions into strips and coat in paprika, salt and olive oil and cook in oven for 30 mins

Chop some cherry tomatoes and add some spring onions and drizzle with olive oil and salt.

Add some fresh squeezed lime and add to tablespoon of natural yogurt to drizzle over your burrito bowl

When all elements are ready put in a bowl and sprinkle with coriander 🌿.
