Baked feta with cherry tomatoes

Delicious served with fresh bread, or alternatively mix it all in with some pasta and some of the pasta water.

Serves: 2 | Cooks: 30 mins


INGREDIENTS


4 tablespoons olive oil, divided

450G to 500G cherry tomatoes

4 cloves garlic thinly sliced

1 small shallot, optional, thinly sliced

1 to 2 small hot chilies, optional, thinly sliced or a pinch of crushed red pepper flakes

flaky sea salt

fresh cracked black pepper

200G block of feta, see notes above, cut into two slabs

Handful of fresh basil

Fresh crusty bread for serving


INSTRUCTIONS


Heat oven to 200ºC.


Pour 2 tablespoons of the olive oil into an 8- or 9-inch baking dish (or something similar). Add the tomatoes, garlic, shallots, and chilies. Sprinkle with a pinch of sea salt and pepper to taste. Toss to coat.

Add the feta. Drizzle with the remaining 2 tablespoons of olive oil. Add more pepper over top to taste.

Put dish in oven’s middle rack for 20 minutes. After the 20 minutes, transfer the pan to the top rack, and switch to your oven’s grill setting. Grill on high for 5 minutes (or more or less), keeping a close watch the entire time. While the tomatoes grill, heat up some bread.

When the tomatoes are blistered to your liking, remove the pan from the heat. Toss in a handful of basil and stir gently to combine. Serve with slices of warm bread.
