Aubergine and feta bake

A tasty dish to serve as a side or a main veggie course.

Serves 4 - 6 as side dish | Time 40 mins



INGREDIENTS


1 large aubergine

1 onion (I prefer red ones)

2 cloves garlic crushed

1 teaspoon paprika

½ teaspoon turmeric

Tablespoon of tomato puree

½ red chilli (or dried chilli seeds to taste)

Tin of chopped tomatoes

Seasoning

Fresh parsley

Olive oil

Block of feta crumbled


INSTRUCTIONS


Make your tomato sauce – fry the onions until soft, add the garlic and chilli, add the chopped tomatoes and paprika and turmeric and tomato puree and cook for 10 minutes. Blitz with hand blender.


While the tomato sauce is cooking slice your aubergine into 3mm slices and drizzle with olive oil and salt – fry in batches and set aside.


In a baking dish make up layers of aubergine, tomato sauce, feta crumbled and some chopped fresh parsley, repeat until you run out with tomato being top layer.


Cook in oven at 200 for about 20-25 minutes until bubbling.


Serve with rice, chicken and veg of your choice.
